Caribe Caribbean Bistro in St. Paul closes, blames Central Corridor

Caribe Caribbean Bistro in St. Paul closed its doors on Sunday, blaming the Central Corridor light rail construction for keeping customers away from the eatery.

Caribe opened at 791 Raymond Ave. in April 2010, and it has been dealing with the construction since March of 2011.

“We can no longer endure the financial losses this construction has caused to our business and our family,” the restaurant said in a letter to customers.

But Caribe held out hope that it would make a comeback someday.

“Nothing can or has killed the dream! Just the location.” the restaurant wrote on its Facebook page Sunday. “We have much to be thankful for and will find a way to open up again.”  (Source: Minneapolis / St. Paul Business Journal)
